My husband loves donuts! As I have said in previous posts, he has a devilish sweet tooth. I try to make him healthier versions of his favorites. These donuts fit the bill….no fryer required. These donuts are made with fresh apples, homemade apple butter, and then baked. I did put a cinnamon frosting on them but they are good without that. I actually prefer them sans the frosting.
Baked Apple Donuts
2 cups cake flour
3/4 cup brown sugar
2 tsp baking powder
1/2 tsp cinnamon
1 tsp salt
1/2 cup apple butter
1/2 cup buttermilk (you can use regular milk)
1/2 cup chopped apples
2 eggs lightly beaten
2 tbsp melted butter
Spray your donut pan with cooking spray. Preheat over to 425 degrees.
Whisk together all dry ingredients. Add the apple butter, buttermilk, butter, and eggs. Mix well and fold in chopped apples.
Pour the batter into each donut cup filling about 2/3.
Bake 7-9 minutes or until donuts spring back when touched. Cool in pan for about 4 minutes before removing.
Once cool you can top with glaze or a cinnamon sugar blend.
I used cinnamon glaze:
1 cup confectioners sugar
2 tbsp milk
1/2 tsp vanilla
1/2 tsp cinnamon
Mix ingredients together – add more milk or sugar to get desired consistency. Frost cooled donuts.
